Foeniculum vulgare plant belongs to the same family as Celery. The Fennel plant is about 7 ft tall. It has yellow flowers and is a highly aromatic and flavorful perennial herb. The plant requires 100 – 115 days to mature before harvest. Harvesting time is difficult to assess because the thickened leaf stalk continues to grow and develop until flowering takes place. There are 2 different varieties of Fennel determined by the seed: – a sweet and a bitter. The seeds are distilled from the flower head, crushed, and distilled to an essential oil. The Sweet Fennel is the preferred variety for use with Aromatherapy The oil is colorless to pale-yellow. Fennel Sweet Essential Oil has a very sweet, liquorice-like aroma, somewhat peppery.
