Bergamot bursts forth, a rollicking river of lime-colored juice that rolls into the comparatively still, soft beauty of lemon, which is drier and slightly floral. Seville orange combines the best of both citruses in its ripe yet lean signature. Sweet marjoram is a brilliant choice, the herb blooming sweetly into a slightly chewy animalism against the backdrop of tart fruits.
